Who doesn't like quinoa? Its a protein packed powerhouse starch and in this recipe made into a cupcake. You can also make this a delicious cake too if you want.

Ingredients

Ingredients:

  • 1/3 cup unsweetened almond milk
  • 4 flax eggs 1/3 cup water and 4 tablespoon ground flax
  • 1 teaspoon vanilla
  • 2 cups quinoa cooked
  • ¾ cups coconut oil
  • ½ cup sugar
  • 1 cup cocoa powder
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

  1. Preheat the oven to 350°F
  2. In a bowl make your flax eggs and let them thicken. Combine with the almond milk and vanilla.

  3. Cook your quinoa and then blend until smooth with the coconut oil.

  4. In a separate bowl combine the sugar, cocoa, baking powder, baking soda, and salt.
  5. Next combine the milk mixture with the quinoa mixture.
  6. Then add your wet ingredients into your dry ingredients.
  7. If you are making cupcakes bake for about 12 minutes or until a toothpick comes out clean; however, if you are making a cake bake for about 30 minutes or until a toothpick comes out clean.
