Keeping it Simple-Brown Rice and Lentils

I like to keep it simple whenever I throw together this quick dish on the fly. This recipe can always be found in my back pocket as one of my favorite vegan lunch ideas in a crunch, since it’s short ingredient list consists of only brown rice, lentil soup, nutritional yeast and some Bragg liquid amino-s! I’ll sometimes add avocado as well. I also like to add turmeric curry seasoning or sometimes I’ll go with a chipotle spice. Packed with protein, carbohydrates and B12, this simple little dish makes for a great post workout meal, as well as an easy staple in the diet of someone on the go.

Ingredients

1 can of Amy’s lentil soup

1 cup brown rice

Nutritional Yeast

Bragg’s Liquid Amino’s

 

Vitamin D Salad

Adding Mushrooms to a salad or any other dish is a great way to add flavor as well as get Vitamin D2! However its important to know that mushrooms do not deliver D3, which is the most important for our immune systems. Light sun exposure is the best way to allow our bodies to produce the D3 that we need.  Experts even consider the Vitamin D our body produces from sunlight as Super D for the extra powerful immune boosting power it delivers!

Here’s another one of my favorite easy vegan lunch ideas.  I throw some sautéed Mushrooms and onions on a bed of leafy greens and top it off with house made Cashew Tamari Garlic dressing from my local Wheatsville Coop. By keeping it simple we can keep prep time down as well as cost!

Chopped baby portobello mushrooms

Chopped red onion

Two handfuls of leafy green salad mix

Bragg liquid amino’s
